Golden Fig
Onion Tart with Harvest Song Fig Jam
Cooking time: 40 min, 4-6 Servings
Dough
- 1 cup all-purpose flour
- ¼ tsp salt
- 6 tablespoons unsalted butter, cut into small pieces and chilled
- 5 tablespoons ice cod water
Filling
- 2 ½ pounds onions, thinly sliced
- 2 tablespoon of vegetable oil or olive oil
- 6 thyme springs
- Salt and freshly ground pepper
- Harvest Song fig jam
- 4 oz goat cheese
Preparation
- Make the dough: In bowl whisk flour with the salt. Mix the butter with the flour until the mixture resembles course meal. Drizzle the water over the flour and stir gently just until incorporated. Flatten the dough into a disk, wrap in a plastic and refrigerate for 1 hour.
- Meanwhile prepare the filling: Caramelize onions in the oil for about 10 min, until softened and golden color.
- On a floured work surface, roll out the dough to 12-inch round and transfer to the baking sheet. Spread the onions on the round, leaving a 1 ½ inch border. Fold the edge of the dough up and over the filling, and brush the edge with egg wash.
- Bake the tart at 375 degrees for about 35 min.
- Take out the tart from the over and add Goat cheese mixed with Harvest song fig jam. Bake 5 more minutes until the cheese is warm.
- Cut the warm tart into wedges and serve
